Cafe allergen chart template

A blank allergen matrix with the 14 allergens UK law says you must declare. Write each drink and dish down the side, tick the allergens it contains, and keep it where staff can check it when a customer asks.

A few things that catch cafes out:

  • Extras count. Oat drinks are made from oats, one of the cereals you must declare, and some flavoured syrups and toppings contain nuts or sulphites. Check each one.
  • Check the pack, not the name. Recipes change, so re-check when a supplier or product changes.
  • Food made and packed on site before it's ordered (prepacked for direct sale) needs a full ingredients label with allergens in bold, not just a chart.

The Food Standards Agency's allergen guidance has the full rules.

Tick each allergen an item contains, including from extras and toppings. If you're not sure, check the pack before you answer a customer.

Let your recipes fill it in

In Quokka you check each ingredient once and it works out the allergens in every drink and dish, extras included, then prints the chart with the date you checked. See how it works.
